With international night just around the corner, the perfect way to get in the mood is to bake some delicious Mexican Wedding Cookies. With a sweet sprinkling of confectioners sugar and a rich, nutty flavor, these cookies are great for any fiesta.

Ingredients:
- 1 cup of butter (room temperature)
- 1 tbs vanilla
- ¼ tbs salt
- ½ cup confectioners sugar
- 2 ¼ cup flour
- ¾ cup walnuts finely chopped
Directions:
- Preheat oven to 400 degrees
- In a large bowl, cream the butter until it’s soft
- Add sugar and vanilla, then cream until completely mixed
- Add flour and salt, then stir until well mixed
- Add finely chopped nuts and mix well
- Roll into one inch balls and place onto an ungreased cookie sheet
- Bake for 10 minutes until slightly browned
- Dip in confectioners sugar while still warm and then dip again when completely cooled
