Bdubbs Bakes: Mexican wedding cookies

With international night just around the corner, the perfect way to get in the mood is to bake some delicious Mexican Wedding Cookies. With a sweet sprinkling of confectioners sugar and a rich, nutty flavor, these cookies are great for any fiesta.

Ingredients:

  • 1 cup of butter (room temperature)
  • 1 tbs vanilla
  • ¼ tbs salt
  • ½ cup confectioners sugar
  • 2 ¼ cup flour
  • ¾ cup walnuts finely chopped

Directions:

  1. Preheat oven to 400 degrees
  2. In a large bowl, cream the butter until it’s soft
  3. Add sugar and vanilla, then cream until completely mixed
  4. Add flour and salt, then stir until well mixed
  5. Add finely chopped nuts and mix well
  6. Roll into one inch balls and place onto an ungreased cookie sheet
  7. Bake for 10 minutes until slightly browned
  8. Dip in confectioners sugar while still warm and then dip again when completely cooled
