Bdubbs Bakes: Graduation Diploma Scroll Tuile Cookies

As graduation day approaches, pair your big celebration with tiny edible diplomas. Made from thin tuile cookies, these delectable scrolls are the perfect way to top off your favorite cake or cupcake.

Ingredients:
1 egg white, room temperature
¼ cup sugar
¼ cup all-purpose flour
A pinch of salt
1 tablespoon unsalted butter, melted
1 tablespoon heavy cream
¼ teaspoon vanilla extract
2 sour belts or fruit roll ups

Procedure:
1. Preheat the oven to 375°F. Prepare a template by cutting a 2 by 3 rectangle out of a sheet of cardboard or a thick paper plate.
2. Whisk egg white and sugar until combined.
3. Beat in flour and salt.
4. Add butter, cream and vanilla. Beat until combined, but be careful not to over mix.
5. Place the template on a Silpat-lined (or wax paper- lined) baking sheet. Spoon 1 teaspoon of batter into the center and spread thinly with an offset spatula. Repeat to make more cookies. (There is only a short window of time to roll the tuiles before they harden, so I found it easier to do only 2 at a time and just make multiple batches).
6. Bake until just barely golden around the edges, about 6 minutes.
7. Immediately loosen the cookies with an offset spatula. Turning the cookie over and starting on a short side, roll the cookie halfway around a skewer. Then roll the other side around the skewer until the two rolls meet in the middle.
8. Let the cookie cool.
9. Cut a thin strip from the sour belt or fruit roll up. Wrap the strip around the cookie scroll and tie.
10. Place cookie on top of your cupcake (or add multiple on top of a cake) and enjoy!
