Bdubbs Bakes: lemon chicken

A chef is only as good as his or her best chicken dish. So for all of you aspiring culinary masters, here is a tasty and simple chicken meal, with easily accessible ingredients that will impress your guests.
Ingredients:
1 lb. of red potatoes
4 lbs. whole chicken with bone and skin
Olive oil
5 lemons
Kosher salt
Ground pepper
4 sprigs of oregano
3 cloves of garlic
1 tablespoon of dried oregano
Procedure:
1. Pre-heat the oven to 375 degrees.
2. Cut potatoes into fourths or an average size for roasting and put them in a gallon-sized bag.
3. Add a tablespoon of olive oil, ½ teaspoon of ground pepper and a teaspoon of salt to the bag of potatoes and toss them until they are thoroughly mixed.
4. Put the potatoes on a large pan that will be able to fit the chicken as well, and put them in the oven for 20 minutes.
5. While the potatoes are cooking, season the chicken and create the marinade (directions are in the following steps).
6. To season the chicken, lightly salt and pepper the chicken in a dish.
7. For the marinade: grate lemon peel until you have 2 teaspoons of lemon zest. Juice ¼ cup of lemon juice. In a small bowl, add 1 tablespoon of dried oregano, ¾ cup of olive oil, a pinch of salt, 3 sprigs worth of oregano leaves and 3 cloves of grated garlic into the lemon zest and juice and then thoroughly mix.
8. Take the potatoes out of the oven and place the chicken on top of them.
9. Evenly pour the marinade on the chicken and rub it into the skin.
10. Cut the remaining lemons in half and place them around the chicken in the pan, facing up.
11. Put the chicken and potatoes back in the oven for 45 minutes until skin is golden and crispy.
