Bdubbs Bakes: Valentine’s Day cookies

Tired of the same old Valentine’s Day chocolates or flowers? Try these chocolate chip meringues this Valentine’s Day for an elegant twist on classic chocolate chip cookies.

Ingredients:

  • 2 egg whites at room temperature
  • 1/4 tsp. salt
  • 1/8 tsp. cream of tartar
  • 1 tsp. vanilla
  • 3/4 cup granulated sugar
  • 6 oz. chocolate chips, miniature chips or finely diced semi or bittersweet chocolate

Directions:

  1. Preheat oven to 300°F.
  2. Beat egg whites until foamy.
  3. Add salt, cream of tartar and vanilla, and beat mixture again until it holds soft peaks. Add the sugar, gradually, beating the batter until it is stiff.
  4. Fold in the chocolate chips.
  5. Spoon batter onto baking sheets.
  6. Bake for 25 minutes. Undersides of cookies should be golden or lightly tanned.

    They look fantastic love the cotlhcaoe on top! The chips I used were very thin (I made them myself), so I didn’t have the moisture absorption issue maybe you could soak them in hot apple juice for about a minute & then drain them before adding them next time? The only reason I didn’t want to use fresh apples is because I was afraid they would turn out too cakey.In any case, thanks for the link! : )
